Protein Pancakes

Weekend energy, weekday effort. Stack them high and don't skip the toppings.
Three ingredients. Two servings. Zero excuses for skipping breakfast. These pancakes are proof that eating well doesn't have to be complicated — the cottage cheese adds a creaminess and protein hit that you'd never guess was in there, and the blended oats give them just enough structure to hold up to whatever you pile on top. Make them on a slow morning, eat them somewhere comfortable, and enjoy every bite.

Ingredients
Makes 2 servings
½ cup oats (blended)
2 eggs
½ cup cottage cheese
Optional: blend in cinnamon or vanilla extract
Top with whatever you prefer
Jordan's Tip Blend the oats into a fine flour before adding the other ingredients — it gives the pancakes a much smoother texture and they hold together better in the pan.
