Berry Summer Salad

Light enough to feel good, substantial enough to keep you going. This one earns a permanent spot in the rotation.


A salad that actually satisfies is a rare thing. This one does it through balance — the sweetness of the berries against the sharpness of the feta, the bite of the red onion softened by the balsamic dressing, the grilled chicken making it a proper meal rather than a side. The dressing is the kind of thing you'll want to put on everything else too. Make extra.



Ingredients

  • 1–2 cups mixed greens (spring mix recommended)

  • 3–4 strawberries

  • ⅛–¼ cup chopped red onion

  • ¼ cup blueberries

  • Sprinkle of feta cheese

  • 4 oz grilled chicken

  • ¼ cup chickpeas

  • 1 small cucumber


Dressing:

  • 1 tbsp balsamic

  • ½ tbsp extra virgin olive oil

  • 1 tsp dijon mustard

  • ½ tbsp jam or jelly of choice

Jordan's Tip The jam in the dressing is the move. It adds sweetness without sugar and pulls the whole thing together — use whatever you have open in the fridge.
